After sealing a bijuu inside someone.... Do the bijuus rest on the mind\spirit or the body? I mean, are bijuus sealed in the mind of the person or the only the body.

Bijuu are just chakra, they are kept inside the body, but can communicate with its holder through its mind because it is fused with its holder.

Anyways, Kyuubi's seal is slightly different from the other bijuu since he was sealed into Naruto but separated from Naruto except for a tiny crack.

As for the other bijuu, they are implied to have been sealed directly into the jinnchuriki, causing a much larger merger of the two. Both entities are capable of taking control of the body, so the jinnchuriki has to hold back the bijuu's mind.

Long story short, the bijuu are resting in the bodies of their respective jinnchuriki, but there is a small mental connection.

If the jinchuuriki uses too much of their bijuu's powerm then they're basically giving the bijuu permission to take over. These jinchuuriki can have conversations with their bijuu, are allowed to use their power, and are allowed to communicate with them. One has to assume that the Kyuubi is sealed in Naruto's stomach, since that's where the seal is, and it can be guessed that that is where all the other jinchuuriki have had their bijuu sealed, but outside of Naruto, that's just a guess.
