I love Itachi too but I never really think of him as part of Akatsuki, he has too much going on in his own story with Sasuke and Konoha for me to think of him as Akatsuki.

Dei and Hidan were the heart and soul of Akatsuki in my opinion, the most unique ones who brought so much life and energy to the group. They had great chemistry with everyone they had scenes with, especially their partners, *manga spoiler* and Akatsuki fandom died for me when they did. I don't care about current Akatsuki because it's just not fun anymore.
