You can't attack Zoro while he's asleep. Trying to do so ends with you getting messed up. The people at Whiskey Peak learned this. Franky's bros early on in W7 learned this. What's next, claiming that Kenshin can be taken out when he's sleeping in the anime ova?:amuse

And seriously, when exactly has Sabretooth been the kill someone in their sleep with firearms kind of guy?

The breath technique says differently. The Sabretooth has been tracked and found plenty enough times in canon. The first X-Men arc written by Carey being a good example.
