Inuyasha wins. Cuts Carnages Yoki with Dragonscale Tessegia and kills both the symboite and Cassidy in one hit.
If he lands a hit then ok.
He touches tessaiga to carnage and carnage assimilates him and tessaiga.

He doesn't need to hit Carnage to kill him with Dragonscale Tessegia. A miss would cleave the aura around him and kill him anyway.

I have a question. Why would Carnage have Youki when it was explained in Inuyasha that only demon have Youki? Is Carnage a Demon?

In OBD all contestants have spirit energy, because all contestants have spirits, unless they are dead lols. I wouldn't know the extent fo carnages spirit energy but he does have it.

For simplicity's sake, Carnage is assumed to be a monster or demon, and therefore possesses youki.

Not even, actually.
The original Carnage symbiote was a mutant symbiote, since the Venom symbiote reproduced within the Earth's atmosphere. Then Venom reassimilated the Carnage symbiote.
Cletus Kassidy found an exact copy of the Carnage symbiote from the Negative Zone, and retained it since (writer's way to retcon Carnage back).
