The manga fight happened before Deidara spent at least 4 years training specifically to counter and defeat Itachi.

Lots of reasons...

Itachi doesn't use Raiton.
Itachi can't fly.
Itachi can't summon snakes.
Itachi doesn't have physical resistance to Deidara's explosions.
Itachi can't summon Manda, Genjutsu him, and unsummon him at lightspeed.
Kishimoto doesn't jack off to pictures of Itachi.

There is no character in the manga who had more counters to and advantages over Deidara than Sasuke, and I'm pretty sure Kishimoto designed it that way intentionally. :pek

Of course, I still think Itachi would beat him in the end. Odds are, however, he'd probably have nearly as hard a time as Sasuke did.

He seemed pretty trigger happy with it against Kakashi and Sasuke.
