Toph could win it alone... especially in the grand canyon.

Collapse a wall here, bring the iron giant down there, and BAM metalbending. Iron giant is now completely non functional.

Can they permantently keep him from automatically being put back together before he fires all of his canons and beams and whatnot?

Well all it would take would be a few Bakusai Tenketsu and he'd 'splode, and since it takes a decent while for him to come back together I'd count that as a loss.
