I'm not to sure about Ryu's full skillset, but I think this could be a close fight...

Sorry to dissapoint you, but it's just me. :P
I only know Ryu from the games, but seeing as Akuma is so powerful outside the game, and Ryu's about his strength...

I don't know, I wanna say Itachi but SF3 Ryu is supposed to be as strong as Evil Ryu in SFA3, who rivaled Akuma's (or was it Shin Akuma's?) strength. Regardless, it sounds like an interesting matchup.

great fight, but ryu doesnt look into his opponents eyes and doesnt need to. He'll vaporize itachi with a super hadouken.

When fighters first face off, they look into each other's eyes to gage their strength. Ryu would be caught in Tsukiyomi at this point.
Other than that,while his ki sense is strong, Itachi's genjutsu could fool Ryu into believing that the person in front of him is the real Itachi and not the Bakuha Bunshin that he replaced himself with.
Since we're not basing this off Evil Ryu (which goes in Itachi's favor), Ryu can really only win by getting close in and beating Itachi physically. A single Shoryuuken or Shin Shoryuuken could easily defeat Itachi. However, that would be somewhat difficult considering his speed is not on par with a ninja of Itachi's level, who could use the Mangekyou Sharingen to predict and evade such an attack before Ryu could perform it.
Current Ryu = Evil Ryu. (minus some moves).

Well, Ryu has a good mix of projectiles and his martial arts close in is probably superior to Itachi's. Itachi's sharingan would help him evade most blows, and he might try to set up for various fire jutsus. Assuming, Ryu dosn't get caught in genjutsu, I think Itachi can stil win on techniques.
Since we're not basing this off Evil Ryu (which goes in Itachi's favor)Why would that be in Itachi's favour?

Ryu's speed is quite debatable, so I don't know who's faster. I remember hearing that he was fast enough to dodge bullets but don't hold me to it. I have to look it up to see if it's true.
As for Ryu's strength, his SHin Shoryuken is stated to be one of the most powerful attack in the SF universe. My only guess is that since Balrog killed Dhalsim's elephant with his bare hand, Ryu obviously should be stronger since he's 2nd tier in the SF universe. But again, don't hold me to any of this as I have to find the official plot guide.

any versions of ryu that was seen in third strike, the first 3 alpha movies of King of fighters series would beat down Itachi if you ask me. the only way to make it a fait fight is if we use ryu from the old school anime.

I'm ready the SF plot guide (it's god awfully looong). So far I haven't found any thing describing how fast or powerful Ryu is but I know it's in here.

Itachi would win because of Tsukiyomi. Whoever said Ryu doesn't need to look at Itachi's eyes doesn't mean he wouldn't... Ryu has no knowledge of Tsukiyomi and would fall for the attack instantly. Sure, Ryu is awesome.. but Itachi takes this because it wouldn't be a h2h battle (that Ryu would win).
Now Ukyo (Samurai Showdown) vs Itachi would be an interesting fight.
