Well, considering Ganondorf can fly and dispel energy attacks it would be difficult for poor ol Saratobi to land a hit, especially if Ganondorf is harassing him with undead.
Ganondorf also has rather phenomenal destructive power, after all he brought down Hyrule castle, so if it came to it he could collapse wherever they were fighting.
Now despite that Im just pointing out Ganondorfs strong points I think it would be a fairly close match, as Saratobi can use flame attacks and thrown knives at Ganondorf with good speed.
However the moment he becomes Ganon it's over, considering his power drastically increases, he can teleport, and wields a weapon that could kill Saratobi with a single strike.
My conclusion: If death god was allowed it would be a tie. Fairly even until Ganondorf transforms into Ganon.

I'm not so sure about this, but is Ganondorf an immortal after gaining so much of power? He's been around for thousands of years. Or does being trapped in the Sacred Realm stop your aging?

It's unknown precisely to what extent Ganon has immortalized himself. Zelda refers to him as an 'Ancient evil reborn' possibly hinting that he has been reincarnated once. It is speculated that his triforce of power has granted him near-immortal status(He's been 'killed' countless times after all, and is coming back again even after being done in in windwaker).

SSBM is not a very good game to show how strong Nintendo characters are. Many of them have their powers boosted or weakened, to balance the game.

Good point meta, for example Captain Falcon(to my knowledge) has never demonstrated the powers he shows in SSMB whereas Ganondorf has been slowed when in reality he can fly and is rather fast.

I'm not sure if this counts (and it's kinda off topic) but in the TV series Captain Falcon used the Falcon Punch on Black Shadow and a ton of Blue enegry flowed out of it. Preety cool when I saw it.

Anyways, Ganon could probably defeat alot of people, and the Master Sword might be required to defeat him, or at least weaken him to the point that he is vulnerable.
